Fresh Mozzarella On Board: Moby Opens Cheese Dairy At Sea

Budenheim, March 11, 2026 – What is a craft on land becomes an attraction at sea: Moby flagships Moby Fantasy and Moby Legacy are now operating their own cheese dairy on board. The "Angolo del Casaro" is the latest expansion of a gastronomic concept that fundamentally rethinks cooking on a ferry.

In collaboration with "Latteria del Curatino", a brand of Podere dei Leoni, and technology partner Comat, a concept has been realized that combines craftsmanship and precision: a master cheesemaker processes fresh buffalo mozzarella and cow's milk mozzarella, as well as bocconcini, ciliegine, and trecce, directly in front of the passengers' eyes.

The on-board cheese dairy is designed for continuous production: approximately nine kilograms of mozzarella are produced every half hour – with constant freshness and seamless product exchange throughout the entire crossing. What is created at the cheese corner is directly incorporated into other on-board dishes: pizza, salads, parmigiana, and all dishes that require mozzarella as an ingredient. Passengers can also enjoy the fresh cheese directly on site or take it home with them.

The concept behind it: "Gusti giusti"
The "Angolo del Casaro" is part of the overall gastronomic concept "Gusti giusti", which Moby developed together with the catering company Ligabue. An entire deck is dedicated to culinary delights – with a gourmet restaurant, grill, pizzeria, self-service area, fresh pasta, and fruit counter.

All preparations are openly visible to passengers: show cooking and seasonal dishes turn the crossing into a culinary experience. Technological details such as automatic checkouts and small service robots complement the human service staff without replacing them.

Moby Fantasy and Moby Legacy operate year-round on the Livorno-Olbia route. They are among the largest and most environmentally friendly ferries in the Mediterranean and offer spacious cabins and extensive on-board services in addition to gastronomy.
